My time at Hotel Taschenbergpalais Kempinski Dresden was exactly that: a rare alignment of trust, vision, and creative freedom. When the hotel reopened in January 2024, it wasn’t just a return to grandeur — it was a rebirth. A moment of stillness before motion.
And from that stillness, Amalie was born.

We didn’t set out to build just another patisserie.
We set out to create an experience — subtle, timeless, refined.
In close collaboration, Amalie became more than a destination. It became a space for pause. A retreat from noise. A patisserie lounge shaped not by excess, but by restraint. Not by trends, but by feeling.
Amalie was designed to speak softly — through detail, calm, and balance. Through its presence, not its volume.

A Spirit Rooted in Place
Every element of Amalie was drawn from the soul of Dresden and the palace itself. I worked with local ingredients, not out of fashion, but out of respect — grounding each creation in the textures, stories, and quiet rhythms of this place.
“We sit here in the lobby lounge, and everything is as it was, in history,” I once said.
“This palace — it’s like a phoenix rising from the ashes.”
That image stayed with me. It became the emotional core of Amalie: quiet strength, elegant survival, rebirth with grace.

Two desserts, in particular, held that essence:
• The Amalie Signature Cake
A modern tribute to Dresden’s iconic Stollen. Rooted in memory. Seasoned with warmth. Understated and enduring.
• The Proschwitz Cheesecake
Silken. Subtle. Touched by Saxon wine. A dessert that didn’t shout — it lingered.
These weren’t just dishes. They were expressions of place, tradition, and emotion.
